A LOWTON woman's home made cake recipe is one of 30 dishes to be selected by judges including celebrity chef Jean-Christophe Novelli for inclusion in a new cookery book for mums and dads.

A nationwide search attracted hundreds of recipes for the Flora Cuisine publication and the judges chose entry Lowton high school teacher Katy Buxton recipe for chocolate beetroot cake was one of the top entries.

Katy’s dish impressed the judges so much because of its originality, ease of preparation, taste and appearance. It will now be published in the first ever recipe book of its kind, available now to download from www.flora.com.

Katy said: “We started a ‘baking rota’ at work, where each week someone brings in something they’ve made for the rest of the staff. I’d seen chocolate beetroot cake in a book somewhere, so thought I’d give it a go, but the first few attempts weren’t very successful, but after a few attempts I’d cracked it and I decided to enter it when I saw the Flora Cuisine competition.

"I’m quite a relaxed baker, I just enjoy doing it, so I didn’t imagine it would end up in the recipe book. I’m pleased to hear Jean-Christophe liked it, I’m looking forward to seeing it in print now!"

Jean-Christophe said: “It was a privilege to judge this nationwide competition, and see first hand just how much cooking talent and skill there is out there! Katy’s Chocolate Beetroot Cake was utterly delicious – the perfect family treat."
